Cacao is shipped as brown beans with a dark, oily interior. They are the seeds of a tropical tree, harvested from large pods, and still need considerable preparation before they become a cup of chocolate.

Roasting, shelling and grinding turn the beans into a paste, mixed with water, sugar and aromatics for drinking. Long familiar in the Americas, chocolate is gaining favour among wealthy Europeans. These cargoes carry the produce of American plantations to kitchens where serving the drink is becoming a mark of refinement.
