Pimentón from La Vera is dried pepper ground into a red powder. The original pods disappear in the preparation, leaving their colour, aroma and flavour in a form ready for cooking.

The peppers are harvested, dried and powdered before sale. Cooks use the result to season and colour food. Because the whole fruit is no longer visible, examining the powder and its scent matters more than judging the name or the shade of red alone.
