Export regions

Rice is shipped as dry grain, with its husk removed for eating. Boiling turns this easily overlooked cargo into a staple meal for large populations.

Asian cultivation supplies extensive markets, while rice also enters Atlantic trade. In late-seventeenth-century Carolina, exports grow through the agricultural knowledge and labour of enslaved Africans. The crop must be cultivated, harvested and prepared before loading; a uniform cargo of grain conceals the very different farms and labour systems behind it.
