Sesame consists of small, flat, oil-rich seeds, pale or dark according to the kind. They are shipped dry, ready to be used whole, ground or sent to an oil press.

Cooks add them to food, including cakes described in seventeenth-century China. The seeds develop in capsules on the plant, then are gathered and sorted after harvest. A merchant's lot still contains the whole seed, leaving its buyer to choose between food and oil making.
