Wheat is shipped as dry grain, golden to light brown, with a groove down each kernel. Millers and bakers look for sound grain that will make good flour; damp or spoiled kernels can ruin the usefulness of a cargo.

Its chief destination is the bakehouse, where it becomes bread for towns and their stores. Before reaching port, the crop is cut and threshed to separate the grain from the ears. Buyers on the quay judge the condition of those kernels and the flour they are likely to yield.
