Newfoundland cod is shipped split, flattened and salted, either still moist or dried for keeping. It looks very different from a fresh fish lifted over the gunwale.

It feeds crews, port towns and European customers observing days when meat is forbidden. Fishing on the Newfoundland banks supplies much of the trade. Gutting, splitting, salting and sometimes air-drying preserve a perishable catch for a voyage across the Atlantic.
