Export regions

Galangal is an aromatic underground stem, or rhizome, shipped in dried pieces. A reddish surface surrounds paler flesh with a strong flavour and fragrance, released when a piece is broken.

Apothecaries use it in their preparations, and vinegar makers may add it to strengthen their product. The rhizomes are dug up, prepared and dried before shipment. Merchants distinguish greater and lesser galangal, so seemingly similar pieces must be examined rather than treated as one interchangeable spice.
