Turmeric is the dried underground stem, or rhizome, of a plant related to ginger. The knobbly pieces look unremarkable until broken, when their bright yellow interior stains the fingers.

Cooks in India use it to colour rice dishes; dyers and glovers also seek its golden yellow. The rhizomes are dug up, prepared and dried, then sold whole or ground. The same cargo can find buyers in a kitchen, an apothecary's shop or a dyeing workshop.
