This is a blend of dried spices, ground and ready for cooking. Its colour, heat and fragrance depend on the ingredients: two lots may smell quite different even when sold under the same name.

Cooks use such mixtures to season rice, meat and vegetables. Pepper and turmeric are among the ingredients ground in the kitchens of India and Ceylon. Each spice has its own harvest and preparation before blending; opening the container lets a buyer judge the mixture's aroma.
