Paprika is a red powder made from dried, ground peppers. Its brightness does not tell a buyer how hot it is; that depends on the fruit used.

Cooks use it to colour and season food. The peppers must be harvested and dried before grinding, which removes the shape of the original pods. A merchant can display the rich colour, but the powder's fragrance and flavour reveal more about how it will serve in the kitchen.
